Sumac Mayonnaise

The sumac plant

An essential ingredient in Middle Eastern cuisine, sumac is used in spice rubs, marinades and dressings, and is also served as a condiment. Sumac goes  well with chicken, fish and seafood, lamb, eggplant, chickpeas and lentils. For a delicious marinade or dressing, mix it (not the mayonnaise but the powder) with yoghurt and other herbs and spices such as chilli, coriander, cumin, paprika and parsley.


2 egg yolks
1 tbs lemon juice
1 tsp mustard powder
1 tsp sumac
1/2 cup (125ml) olive oil


1. Place egg yolks, lemon juice, mustard powder and sumac in the bowl of a food processor and mix until combined
2. With the motor running, gradually add oil in a thin, steady stream until thick and pale
3. Taste and season with salt and pepper.
