Menemen – tomatoes, peppers, eggs

A perfect for summer dish which is fast and easy to prepare and extremely nutritious. Best enjoyed at breakfast but it also serves as a bright and tasty lunch.

ingredients

6 eggs (for 3 people)
6 medium/large tomatoes, peeled and chopped into small chunks
4 long green peppers cut into small chunks . Bell peppers can be used if you can’t find long slender ones.
3 tbs olive oil
Salt and pepper to taste
2 tbs crumbled fetta cheese (optional)

steps:

1.Warm the olive oil in a large pan, then lightly fry the peppers without browning. After about 2 minutes add the chopped tomatoes. Cook the mixture until all the veggies are soft (around 7-8 minutes), and the juice has been reduced by about half.
2. Crack the eggs in and stir continually until it begins to firm. Alternatively, leave the eggs sunny side up.  The end result should be firm and juicy, not dry.
3. Season with salt and pepper.

Crumble fetta on top if you like and serve.
