Turkish bulgur salad (kisir)


1 cup fine grain bulgur wheat
60 ml olive oil
1 onion, diced
1-2 tbs tomato paste
1-2 tbs pepper paste
1 lemon juice
2 tbs pomegranate molasses
1 tsp salt
1 tbs sumac
1/2 tsp black pepper
3-4 tomatoes, diced
1/2 bunch spring onions, sliced thinly
1 cup chopped parsley
1-2 banana chili – red or green


1. Put the bulgur and chopped onion in a large bowl and pour sufficient hot water to cover over by 1-2 cm. (it should stay like this for 15 minutes). Stir bulgur with fork to aerate once it has soaked up the water.

2. Add the salt, tomato paste, pepper paste, sumac, black pepper to bulgur and mix together by hand.

3. Add parsley, spring onion, tomato and banana chiliand stir through with your hand

4. Add lemon juice, pomegranate molasses and olive oil.

5. Serve cold with lettuce.
